Why I’m Obsessed with Totchos

  • Total Crowd-Pleaser: Whether it’s game night, a casual get-together, or just a fun family dinner, everyone devours these.
  • Incredibly Customizable: The beauty of totchos is that you can load them up with whatever your heart desires.
  • Pure Comfort Food: Crispy, cheesy, and full of flavor – it’s the perfect indulgence.

Ingredients You’ll Need

  • 1 (28-32 ounce) bag frozen tater tots: Any brand will do!
  • 1 pound ground beef (or turkey or plant-based crumbles): I like to use lean ground beef.
  • 1 packet taco seasoning: For that classic nacho flavor.
  • 1 cup shredded cheddar cheese: Or a blend of cheddar, Monterey Jack, and Colby.
  • 1 cup shredded lettuce: Adds a bit of freshness.
  • 1/2 cup diced tomatoes: Adds a juicy burst of flavor.
  • 1/4 cup sliced black olives: A must-have for me!
  • 1/4 cup sliced green onions: Adds a mild oniony flavor.
  • Pickled Jalapeños: Add heat as per taste
  • Sour cream and salsa: For dipping or dolloping!
  • Optional Toppings: Guacamole, queso, corn, beans, pickled onions…the sky’s the limit!

Let’s Get Cooking! The Totchos Recipe

Prep Time: 10 minutes

Cook Time: 20 minutes

Total Time: 30 minutes

  1. Bake the Tots: Preheat your oven according to the package directions on your bag of frozen tater tots. Usually, it’s around 400°F (200°C). Spread the tater tots in a single layer on a large baking sheet and bake for about 15-20 minutes, or until they’re golden brown and crispy.
  2. Brown the Meat: While the tots are baking, brown the ground beef (or whatever protein you’re using) in a skillet over medium heat. Drain off any excess grease.
  3. Add Taco Seasoning: Stir in the taco seasoning packet and follow the instructions on the packet, usually involving adding some water and simmering for a few minutes.
  4. Assemble the Totchos: Once the tots are crispy, remove them from the oven. If desired, sprinkle half the cheese over the tots and put them back in the oven for a minute or two to melt. Remove. Top with the seasoned ground beef, remaining cheese, lettuce, tomatoes, black olives, green onions, and any other toppings you love.
  5. Serve Immediately: Serve your loaded totchos immediately with sour cream, salsa, and guacamole on the side for dipping.

Totcho Customization: Make It Your Own!

This is where the fun really begins! Here are some ideas to customize your totchos:

  • Cheese, Please!: Experiment with different cheeses like pepper jack, queso fresco, or even a drizzle of queso dip.
  • Spice It Up: Add diced jalapeños, a dash of hot sauce, or even some chili powder to the ground beef for extra heat.
  • Go Vegetarian: Use plant-based crumbles and load up on beans, corn, and veggies.
  • International Flavors: Try using chorizo and a spicy cheese sauce for a Mexican twist, or seasoned lamb and tzatziki sauce for a Greek version.
  • Sweet and Savory: Add some cooked bacon and a drizzle of maple syrup for a surprisingly delicious combo.

Totcho FAQs: Your Burning Questions Answered!

  • Can I make this ahead of time?
    • I don’t recommend assembling the totchos too far in advance because the tots can get soggy. You can, however, prep all the toppings ahead of time.
  • Can I use an air fryer for the tater tots?
    • Absolutely! Air frying tater tots is a great way to get them extra crispy. Follow your air fryer’s instructions for cooking frozen tater tots.
  • What kind of salsa goes best with totchos?
    • That’s a matter of personal preference! I love a classic pico de gallo, but you can use anything from a mild tomato salsa to a spicy salsa verde.
  • What if I don’t have taco seasoning?
    • You can make your own taco seasoning! There are tons of recipes online using common spices like chili powder, cumin, paprika, garlic powder, and onion powder.
