  • 1 pound pork tenderloin, cut into 1-inch cubes
  • 2 tablespoons blackening spice (store-bought or homemade – recipe below!)
  • 2 tablespoons olive oil
  • Salt and pepper to taste

:

  • 1 tablespoon paprika
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 teaspoon cayenne pepper (adjust to your spice preference)
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt

  1. : In a bowl, toss the pork cubes with the blackening spice, salt, and pepper. Make sure each piece is evenly coated for maximum flavor.
  2. : Heat the olive oil in a large skillet over medium-high heat. Once the oil is shimmering, add the pork bites in a single layer (don’t overcrowd the pan – work in batches if needed).
  3. : Cook the pork for about 2-3 minutes per side, until they’re nicely blackened and cooked through. The internal temperature should reach 145°F (63°C).
  4. : Remove the pork bites from the skillet and let them rest for a couple of minutes before serving. This helps to keep them juicy!

  • : Ranch, BBQ, honey mustard, or even a spicy mayo are all fantastic.
  • : Thread the blackened pork bites onto skewers with some veggies for a fun presentation.
  • : Add them to your favorite salad for a protein boost.
  • : Use them as a filling for tacos or wraps with your favorite toppings.
  • : A quick and easy way to add protein and flavor to your grain bowls.

  • : Adjust the amount of cayenne pepper in the blackening spice to control the heat.
  • : You can use chicken or shrimp instead of pork. Just adjust the cooking time accordingly.
  • : Add a drizzle of honey or maple syrup after cooking for a touch of sweetness.
