- 12 oz fettuccine pasta1
- 2 tablespoons extra-virgin olive oil1
- 1 pound shrimp, peeled, deveined with tails removed1
- Kosher salt, to taste1
- Freshly ground black pepper, to taste1
- 2 cups heavy cream1
- 8 tablespoons unsalted butter1
- 4 cloves garlic, minced1
- 1 ¾ cup grated parmesan cheese1
- Ground black pepper, to taste1
- Parsley, optional garnish1
- Cook the fettuccine pasta according to the package instructions1. Reserve 1/2 cup of pasta water.
- Season the shrimp with salt and pepper and cook in hot oil, about 2 minutes per side until pink, opaque, and loosely curled1. Transfer to a plate and set aside.
- Add the butter to the pan. Once melted, add the garlic and cook for 30 seconds1. Add the heavy cream and parmesan1. Simmer over low-medium heat, stirring constantly, until thickened1. Taste test and add salt and pepper to taste.
- Toss the pasta in the sauce, remove from heat, and add the shrimp1.
